DIRECTIONS
This sauce is terrific over cheesecake or can be used to make Rhuberry Margaritas (see the Atkins recipe).
- In a medium sauce pan combine the rhubarb, granular sugar substitute and water. Bring to a boil, cover and cook for 5-10 minutes until softened.
- Add the strawberries and continue to cook covered for 5 more minutes. Cool to room temperature before using. May be refrigerated for up to 1 week or frozen for 3 months. Try freezing in ice cube trays to use for Rhuberry Margaritas or as individual serving sizes for sauces. 2 tablespoons per serving.
