1 3/4 cup Chicken Broth, Bouillon or Consomme

DIRECTIONS
- Pour turkey drippings into a gravy separator or glass measuring cup; drain off and discard as much excess fat as possible. Alternatively, use 1/4 cup butter and 1 3/4 cups chicken broth instead of turkey drippings so that you have a total of 2 cups.
- Pour into a small saucepan, add water and bring to a simmer. Whisk in thickener; simmer, whisking frequently, for 4 minutes. Remove from heat and whisk in 1 tablespoon cream (optional).
- Taste, stir in salt and freshly ground black pepper if necessary and serve. Each serving is 2 tablespoons.
Cooking Tip
If you've cooked the turkey yourself, use 2 cups of the drippings to replace the butter and chicken stock.
