INGREDIENTS

  • 1 lb Shrimp
  • 2 tablespoon Unsalted Butter Stick
  • 0 1/2 cup, chopped Onions
  • 2 tbsp Tomato Paste
  • 16 oz Clam juice
  • 2 Tbsp Thick-It-Up
  • 1 cup Heavy Cream
  • 0 1/2 cup Tap Water
  • 1 tbsp Sherry, Cooking Wine
  • 0 1/2 tsp, leaves Tarragon

DIRECTIONS

  1. Cook shrimp in boiling water for 2-4 minutes until they curl and turn pink. Drain off water and plunge them into an ice water bath until cool to the touch. Drain off water and peel. Reserve 8 shrimp for garnish. Set aside.
  2. Melt butter in a medium soup pot over medium heat. Sauté diced white onion until softened, about 5 minutes. Add tomato paste and cook out for 1 minute, stirring frequently.
  3. Stir in clam juice and bring to a boil. Reduce heat and simmer 10 minutes. Stir in thickener, whisking until smooth. Add shrimp to pot and cook 30 seconds, just to heat through slightly.
  4. Puree soup in a blender in batches. Strain soup through a fine mesh sieve back into the pot, pressing firmly onto the solids to release all liquid. Whisk in cream, water and sherry (optional). Simmer to allow flavors to blend, about 3 minutes. Stir in chopped tarragon and season to taste with salt and pepper.
  5. Transfer to bowls; garnish with remaining shrimp, a pinch of tarragon leaves and cayenne pepper (optional).
