How to Calculate Atkins Net Carbs

3 tbsp Light Olive Oil

0 1/2 small Onions

2 clove Garlic

1 cup Diced Tomatoes

4 oz Sauvignon Blanc Wine

0 1/2 tsp, leaves Oregano

0 1/2 tsp Salt

1 lb Shrimp
-
4 oz Feta Cheese
-
2 tbsp Parsley
DIRECTIONS
- Heat oil in a large nonstick skillet over medium heat.
- Sauté diced white onion 5 minutes, until soft. Add minced garlic and cook 1 minute more. Add tomatoes, 1/2 cup water, wine, oregano and salt to skillet.
- Cook 10 minutes, stirring occasionally, until mixture thickens. Add shrimp to skillet, cook 2-3 minutes until just cooked through.
- Stir in cheese, parsley and 1 Tbsp Ouzo or Pernod (optional for added flavor). Serve immediately.
