1 1/3 lb Dried and Salted Atlantic Cod

0 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Red Sweet Pepper

0 1/2 medium Red Onions

0 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Green Sweet Pepper

2 stalk, medium (7-1/2" - 8" long) Celery

1 medium whole (2-3/5" dia) Red Tomatoes

1 tsp Garlic
-
2 tablespoon Extra Virgin Olive Oil

0 3/4 cup Tomato Sauce (Canned)
DIRECTIONS
- Place cod in a large bowl. Cover with water by 2-inches. Soak 1 day, changing water once or twice. Remove cod from water; pat dry and break into chunks.
- Heat oven to 350°F. Dice the onion, peppers, celery and tomatoes. Mince the garlic.
- In a 9x13-inch baking pan, toss onion, peppers, celery, tomato, and garlic with olive oil. Gently mix in cod and tomato sauce.
- Cover with aluminum foil; bake 1 1/2 hours until fish is soft and flavors are blended.
