INGREDIENTS

  • 2 plum tomato Red Tomatoes
  • 2 oz Green Olives
  • 2 fl oz Sauvignon Blanc Wine
  • 1 tsp Rosemary
  • 1 tsp Garlic
  • 1 tbsp Light Olive Oil
  • 24 oz Pork Loin (Tenderloin)
  • 0 1/2 tsp Salt
  • 0 1/4 tsp Black Pepper
  • 1 cup Chicken Broth, Bouillon or Consomme
  • 2 tsp Thick-It-Up

DIRECTIONS

Though there is wine in this recipe, all of the alcohol burns off while cooking and enhances of the flavor of the pork.
 
  1. Combine tomatoes, olives, white wine, rosemary and minced garlic in a bowl.
  2. Heat oven to 400°F. Heat oil in a heavy ovenproof skillet over medium-high heat until hot. Sprinkle pork with salt and pepper. Brown pork on all sides, about 5 minutes. Add tomato mixture.
  3. Insert ovenproof meat thermometer into thickest part of pork. Place skillet in oven and bake 30 minutes, or until thermometer registers 160°F. Remove pork from skillet; cover and keep warm.
  4. Place skillet over medium heat; add broth and thickener. Bring to a boil; reduce heat and simmer until slightly thickened, 5 minutes. Serve sauce over pork
