4 oz Sharp Cheddar Cheese

4 oz Vintage White Extra Sharp Cheddar Cheese

0 1/3 cup Real Mayonnaise

2 oz Pimento (Canned)

1 tsp smoked Paprika

0 1/2 tsp Dijon Mustard

0 1/4 tsp Salt

0 1/8 tsp Red or Cayenne Pepper
DIRECTIONS
- Shred cheeses and set aside.
- Combine mayonnaise, diced pimento, smoked paprika, Dijon mustard, salt, and cayenne pepper (to your taste) in a small bowl. Stir with a fork to blend flavors.
- Add the cheeses to the mayonnaise mixture stirring to fully incorporate. Wrap and chill for 2-3 hours before serving for best flavor. May be kept tightly covered in the refrigerator for 1 week. Serve with celery sticks or other vegetables. Each serving is about 2 Tbsp.
