DIRECTIONS
Use the Atkins recipe to make Atkins Flour Mix; you will need 1/3 cup.- Shred sweet potatoes on a grater. Combine sweet potatoes, diced onion, 1/3 cup flour mix, eggs, orange zest and salt in a large bowl.
- Heat oil in a large skillet over medium-high heat. Drop 2-tablespoon mounds of sweet potato mixture into pan, flattening slightly; fry in 3 to 4 batches until golden brown, about 2 minutes per side. Drain on paper towels and serve hot.
