DIRECTIONS
Ingredient notes: 2 medium Asian pears will equate to roughly 3 ½ cups sliced pear.- Heat oven to 375°.
- In a food processor, pulse the pecans and walnuts about 5 times until slightly broken down. Add ¼ cup coconut flour, 2 tablespoons of swerve brown, ¼ teaspoon cinnamon and salt. Pulse again until fully incorporated. Roughly chop the Atkins Snickerdoodle Bar, cut 3 tablespoons of cold butter into chunks and add both to food processor. Pulse until butter is integrated, but small chunks are still visible. Refrigerate.
- Peel, core and thinly slice the pears. Place into a large bowl and set aside.
- Melt the remaining butter (2 tablespoons). In a small bowl, whisk together the melted butter and 2 teaspoons coconut flour. Mix in remaining swerve brown (2 tablespoons), remaining cinnamon (1/4 teaspoon) and a pinch of salt. Stir in the lemon juice and vanilla extract. Scoop into the bowl with the pears and fold until pears are evenly coated. Scrape into an even layer in an 8-inch by 8-inch baking dish.
- Using your hands, evenly cover the pears with the pecan and bar topping. Bake for 30-35 minutes, or until top is browned and pears are bubbling. Let cool for 10 minutes before serving. Each serving is about ½ cup.
