3 tablespoon Hot water

2 tablespoon Confectioners (powdered) erythritol

2 tablespoon (2.7 g=1 tbsp) Coffee, instant powder, dry

0 1/4 tsp Cinnamon, ground

2 cup Coconut Milk Beverage, plain, unsweetened
DIRECTIONS
- In a large bowl, dissolve the powdered erythritol in hot water. Add the instant coffee and cinnamon and combine with a hand mixer on medium high speed until lightened in color and stiff peaks form, up to 5 minutes.
- To serve, fill a glass with 1 cup of unsweetened milk alternative, and dollop of ½ cup of the foam. You can sip it as is, or mix the coffee foam into the milk. The foam will keep in the refrigerator for up to 2 days. If it seperates, you can quickly whip it back into stiff peaks.
Note: you can make this using a stand mixer, or even by hand with a balloon whisk (although whipping by hand will take much longer).
