DIRECTIONS
Use the Atkins recipe to make Atkins Flour Mix for this recipe, you will need 1/3 cup.
- Cut tomatoes crosswise into 1/2 thick slices. In a shallow plate combine cornmeal, baking mix, salt and pepper.
- Heat oil in a large nonstick skillet over medium-high heat. Dredge 4 to 5 of the tomato slices (depending on size of pan) and fry 2 minutes per side, until golden. Repeat this process, wiping skillet between batches.
