INGREDIENTS

  • 1 each Atkins Peanut Butter Fudge Crisp Bar
  • 0 2/3 tbsp Butter, unsalted
  • 2 tablespoon Tap Water
  • 0 1/2 tsp Gelatin Powder
  • 0 1/3 cup Heavy Cream, liquid
  • 2 Tbsp Peanut Butter, natural creamy
  • 1 tablespoon Confectioners (powdered) erythritol
  • 0 1/2 tsp Vanilla Extract
  • 0 1/16 tsp Salt
  • 2 drop Liquid Stevia Drops
  • 1 tbsp Lily's Sugar Free Chocolate Chips

DIRECTIONS

  1. Line two cups of a muffin tin with paper liners. Into a small bowl, crumble bar and mix with 2 teaspoons melted butter. Divide evenly between the two muffin liners and press into a crust on the bottom using the bottom of a measuring cup to make it even. Refrigerate until needed.
  2. In a small cup sprinkle the gelatin over the water. Set aside until needed.
  3. In a small saucepan combine the cream, peanut butter, sweeteners, vanilla, and salt. Warm over medium heat, stirring constantly, until steaming and starting to simmer, about 3 minutes. Remove from heat and stir in gelatin and water until dissolved.
  4. Scrape into a small mixing bowl and use a hand mixer to whip until it is close to room temperature, about 4 minutes. Cool in the refrigerator for 6 minutes, then remove and whip with the hand mixer again until soft peaks form, about 3 minutes. If the mixture is not thickening, place it back in the refrigerator for 2 minutes and try again.
  5. Remove the crusts from the refrigerator and fill each with half of the peanut mixture, about 6 tablespoons each. Return to the refrigerator until set, about 30 minutes.
  6. Before serving, melt the chocolate chips in the microwave or in a double boiler and drizzle melted chocolate over each of the pies.
