DIRECTIONS
- In a small sauce pan, combine 1 ½ cups tap water, cranberries and thinly sliced ginger (about 2 tablespoons). Bring to a boil over high heat, reduce heat and simmer for 10 minutes.
- Remove from heat, and use the back of a spoon to smash the cranberries against the side of the pot. Stir and allow to cool for 10 minutes. Strain the cranberry mixture through a fine mesh sieve, and gently press on the cranberry pulp to get as much juice as you can (you should get about 1 cup). Discard the solids. Place the warm juice mixture in a glass jar and add the sucralose, stirring to dissolve. Cover and refrigerate until completely cooled, at least 1 hour.
- To make each drink, combine ¼ cup of the cranberry mixture with ½ cup sparkling water. Garnish with whole cranberries.
Note: Because the cranberry and ginger solids are not consumed, the final product will have fewer total carbs and less fiber. The Net Carbs, however, are accurate.
