INGREDIENTS

  • 1 1/2 cup Chicken Broth, Bouillon or Consomme
  • 4 tsp Thick-It-Up
  • 2 medium (4-1/8" long) Scallions or Spring Onions
  • 4 tsp Sesame Oil
  • 1 1/2 tsp Garlic
  • 4 tsp Ginger
  • 2 tbsp Sodium and Sugar Free Rice Vinegar
  • 2 tbsp Tamari Soybean Sauce
  • 2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 2 lb Channel Catfish (Farmed)

DIRECTIONS

  1. Heat broiler. Mix broth and thickener in a small bowl; stir until thickener dissolves.
  2. Heat oil in a medium saucepan over medium heat. Mince the garlic and ginger, add them to the pan and stir-fryfor 30 seconds.  Add rice wine vinegar, soy sauce, sugar substitute and broth mixture.
  3. Bring to a boil. Cook, stirring constantly, 1 minute. Remove from heat. Brush fillets with sauce. Broil 3 minutes per side.
  4. Transfer to plates; top with remaining sauce. Garnish with green onions.
