1 cup Cauliflower

1 link Spicy Chorizo Chicken Sausage

1 slice (1 oz) Monterey Jack Cheese

2 Tbsp Red Salsa

1 half Avocado, Hass
DIRECTIONS
- Cut cauliflower into bite sized pieces and place in a medium non-stick skillet over medium-high heat. Add 2 Tbsp water and cook until water evaporates and cauliflower is crisp-tender (add more water as necessary to prevent burning). Once cauliflower is crisp-tender remove it from the pan and place on a serving platter, keep warm.
- Add the chorizo to the pan and break it up into bite sized pieces with a spatula. Cook until sausage is cooked through. Remove from heat and place on top of the cauliflower on the serving plate.
- Top the cauliflower and chorizo with cheese, allowing it to melt. Serve once cheese has melted with 2 tablespoons fresh salsa and the avocado. Consider using this Atkins recipe for Salsa Cruda.
