1 cup Parsley

DIRECTIONS
- Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add 24 ounces of chicken bratwursts (about 8 links if 3.2 ounces each) and brown on all sides, turning frequently, about 5 minutes. Slice onions and bell peppers. Mince the garlic.
- Meanwhile, heat remaining 2 tablespoons oil in a medium skillet over medium-low heat. Add onion and cook, stirring occasionally for 5 - 6 minutes until soft. Add thyme and minced garlic and cook 1 minute more. Stir in bell pepper and cook 10 minutes, stirring occasionally, until peppers just begin to soften.
- Add onion and pepper mixture to sausages; add chopped parsley and salt and black pepper. Cook 10 minutes more.
