3 tbsp chopped Onions

0 1/4 cup, chopped Green Sweet Pepper

0 1/2 small whole (2-2/5" dia) Red Tomatoes

0 1/8 tsp Red or Cayenne Pepper

2 large Egg (Whole)

4 oz, boneless, cooked Fresh Ham
DIRECTIONS
- Heat oil in large heavy skillet over medium heat. Sauté white onion 5 minutes, until softened.
- Add green peppers, diced tomatoes and cayenne. Cover and cook 5 minutes, until vegetables are very soft, stirring occasionally. Season with salt and freshly ground pepper and set aside.
- In small bowl, beat eggs until blended. Set aside.
- In large nonstick skillet, add the ham and cook 3 minutes or until just beginning to brown on the edges. Add the pepper mixture and then the eggs. Stir the mixture until the eggs begin to scramble, about 5 minutes. Serve immediately.
